Easiest Way to Cook Perfect Garlic and lemon new potatoes

Garlic and lemon new potatoes. This is a simplified version of a dish my Costa Rican host sister used to make when I was in the Peace Corps. Cut scrubbed potatoes into wedges; place in a large saucepan. Add water to cover; bring to a boil.

Cover; blend or process until smooth. A wonderful way of making roasted potatoes as a side dish for your meals! Heat the olive oil in a frying pan over a medium heat, add the potatoes and fry for five minutes, stirring frequently.
